Everything I ever saw about proper motor height boils it down to cav plate height above the water w/boat on plane.
The cav plate on plane should be 1/2" to 1" above the water. The only reason to set it any lower would be if your particular hull/motor/prop combination has a tendency to blow out on turns....and that assumes you're trimming the motor full down on those turns...
