Well there ain’t too many good ways to cook dove, but there are a whole lot of bad ways.
These birds (small pigeons) will taste like liver if prepared improperly.

The best way is to peel them out of their breasts, soak them overnight in water and then marinate them in something with an acidic base like red wine or Italian dressing another night.

Then flour them and fry them and then make a gravy to simmer them in.

Good on rice
Don’t look like much for the effort, but is gooood!

Thanks Blue, the beets also were in vinegar.
The best way to start the preparation of “game birds” is to not do anything to them until your ready to clean them and surrender to a cooler, refrigerator or freezer.
Leaving the bird intact and at normal air temperature until that time isn’t rotting, this is called “seasoning”. Seasoning gives the natural enzymes time to break down the tendons and meat to be tender. The bird will not spoil or dry out for at least 12 hours or more.
Once cleaned and deboned, soaking in water refrigerated overnight will help bring out anything undesirable such as shot, dirt or feathers. Then the marinate of your choice will help improve the palatability.
A few things are not as good once frozen and these are one of them.

Yeah same goes for deer but I always just clean and put away :-/

I LOVE me some dove "medallions" as we call em round here.

They are also great wrapped in bacon and grilled.

I put a few in the freezer yesterday evening. Gonna get a mess and cook em up!

That perticular day was a Winchester model 50, 20ga with a poly choke added. It's a semi auto made in 1957.
