I haven't started on mine yet but got the same setup.
My intentions are to put keel pads in place of the rollers and covering the bunks with Glide Slicks or the like. This will lower the boat about four to six inches. The only problem I may encounter is the very front roller as what to do in that location. But like I said "I ain't started on it yet". I don't remember if your trailer was single or tandem. If tandem you can also put 13" tires and rims on it to lower the boat and not reduce the carring capacity too much. When I add tandem to mine I'll make them 13".

Some differences in 13" & 14" tires for tandem.
ST175/80R13 , load rateing 1360lbs, height 24.02" ,cost $95, tires and rim ST205/75R14 , load rateing 1760lbs, height 26.11" ,cost $120 tires and rim The 13" tires will lower the trailer height about one inch and save you when buying a set $100. While having the carring capacity of 5440lbs, this is 1600lbs less than the 14" but the average expected loaded weight of a 20' V is about 2800*lbs. And don't forget to add the trailer weight, 900-1800lbs. All in all 13" looks better for normal use.
