Plenty of options ..I made a set on my previous hull...marine ply, marine stain and laminate it with clear resin for UV protection ...See pictures below of current plastics

Although if you count it , Reelapeelin kind of finished off the ones in his V-21 with some starboard and lattice stuff, maybe thats what you are thinking? Anyway standard solution seeems to be hit ebay and such and find a set for sale close enough to your opening preferably a hair larger and then just open up your cutouts and fit them in.
