Welcome to the board!!
I have a 75 V20 and is the same config as yours. With one twist, it use to be a I/O and I converted to outboard via a bracket Ck out my gallery for some ideas, but it sounds like you know what you want already! I have the same gas tanks and I have another 25 gal tank were the motor use to be. Check out everyones gallery's!!
