I thought about the seat boxes but I think they are entirely too wide for a V.

Those are not seat boxes. They're engine covers. :)

That is an interesting layout. It looks like there are seats in front of the helm, between there and the windshield.

You could put a couple outboards on it and use the holes where the engines were for gas tanks, fish boxes, storage, etc....
