When I took the rollers off my trailer and installed bunks I used some 2x6 and made a v to meet the bottom of the boat. Used a bottle jack and lifted it up off trailer and then built a 2x6 frame then removed the jack. Some thing like that might work, u will have to do front and back and make it wide enough to get outside the trailer so u can get it out from under boats.
You will have to be a little creative. How close are your neighbors? They will probably be sitting on a lawn chair with a drink watching you.
Any boat ramps close by you and another guy can run down and swap boats quick?
