You’re right D - it is nice to just exchange some chat. I think apple selection is a pretty important variable in both the flavor and mouth feel of a pie and also dictates somewhat the amount if sugar that’s appropriate. I admit I don’t know squat about making pies but my wife is a superb cook and makes fantastic crusts, so I suppose I’m partial to not so deep dish pies to maintain my preferred filling to crust ratio. That being said, I’ll take the recipe and run it by her.

I’m in bed getting ready to sleep and this is making me really hungry for some apple pie - I need to quit talking about it.

Yeah D is right! I know I've been busy lately. My youngest daughter had a baby, baby coded for 20 minutes. Scared all of us to death. All is good with her now after spending two weeks in CHKD. One of my son in laws has a failed liver and we almost lost him twice lately. And the last 14 days I've worked shutdown at the steel mill 12 1/2 hours a day, 7days and 6 nights, got one more night to go. Between all that and cutting grass, working on the house and the garden, I haven't even taken my boat out the whole summer. I always thought you had more time to do what you want when you hit 60, that aint so! Hope you fellas are all doing good!

My mom was in the hospital for something and while there she coded. Took them 18 minutes to bring her around, so I know exactly how frightening that is. Wonderful to hear the baby's okay now. Prayers sent for your son-in-law.
YIKE on the long shift at the mill!!!! I completely understand about the lack of boating. It happens too often to me, but I hang in there and hope for the day(s) to come when I can feel the water under her and taste the salt on my lips again as we head out to battle. Red sky's at night :)

You asked so this is my latest recipe:

(Right now I am partial to a 3-1 ratio of 3 Granny Smith to 1 Macintosh apples) I find the Macintosh gives it just the right amount to tang to taste

1/2 cup milk (whole, not 2%)
1 Tsp Vanilla
1/2 cup white sugar (you can substitute 1/4 cup white and 1/4 cup brown)
1 Tsp Cinnamon (heaping)
1/4 Tsp Nutmeg
3 Tbls Tapioca (I like this but some ppl don't. It can be omitted if so desired)

Peal, core and slice apples in a large bowl. Combine all ingredients in a smaller bowl, whisk them together until well blended, then pour the mixture over the sliced apples and toss them until they are fully coated.
Let them sit while you prepare the pie dish with your dough, then layer them in the prepared pie plate, pour any left over liquid over them, cover with second piece of dough, slit top and bake.

400* for 10 minutes, then reduce heat to 350* and bake an additional 45-50 minutes. Cool and enjoy

That apple pie sounds delicious! My wife made apple and peach cobbler a week ago, It was great. She made pumpkin fudge with chopped pecans today for all of us working tonight, wow its great. You need a glass of milk to chase it, its really rich. Tonight is my 14th shift and last night, get 4 days off now. Made some good money but about wore my old a$$ out. Hopefully I can take the old Boneshaker out this coming week. I really miss riding the river!
