Default Portuguese Soup

Winter is fast approaching us northern guys, and soup is one of my favorite things all the time, but now mostly!!

This can be made a bunch of ways, and often is!! But I have always had it this way growing up.

1 pound Linguica or Chourico , 1/2" sliced up
1 pound beef stew meat 1" cubed
1 large or 2 small yellow onion rough chopped
1 pound Carrots peeled and chopped
2 pound Kale or Collards stemmed and chopped
3 large potatoes 1/2" Diced
1 can Dark Kidney beans Juice and all
1 can Stewed tomatoes Juice and all
1 quart Chicken stock
Salt to taste


In a large pot cook the linguica , onion till onion is tender, ( linguica is already cooked just heating up for the grease)
add stew meat and cooked till browned, then add chicken broth, carrots, potatoes, beans, kale and stewed tomatoes. bring to boil then lower too simmer for about 1 hour.

Kale will over fill the pot at first and you are going to say this is way to much, but it will wilt down fast, and you will say were did it go?
Also I can't add hot pepper to it cause of my wife, so IMO red crushed pepper is a must!!

Always better the next day!!

Some nice crusted bread and you are in heaven!
