Here is my fav fish brine recipe soak for 24 Hrs pat dry let sit for and Hr then into the smoker. We did some full lenght elk ribs the other day kind of looked like Fred Flinston and friends around the fire pit eating them.
2 L-water 1 Cup-pickling salt 1 Cup-brown suger 1/2 Cup-soy sauce 1 Tbs-liquid smoke 1 Tbs-onion powder 1 Tbs-garlic powder 1 Tbs-celery salt 1 Tbs-cracked black pepper 1 Tbs-tabasco sauce This works great on most fish ( Perfect for Salmon ) I have tried it on and enjoy.
