Ok, so I almost hate to say it but to me...NC/SC oysters are so much better than gulf coast oysters. It may be cause I've never had gulf oysters fresh, but they just dont have the same salty flavor.
What do yall think?

I've never had NC/SC oyesters, but keep in mind there are SEVERAL different kinds of gulf coast oyesters out there. The FL panhandle ones from apalachicola and the surrroundiung area are pretty good, and plenty salty at the the right time of year(ther best in the winter time). Louisiana has a whole nother kind of oyesters ther, and from what I hear they are huge and have a more muddy type tast to them without the saltiness from all of teh brackish marh they have over there. Then theres Texas with there jumbos that as I understand are almost to salty to eat. So depending on where they came from and when they were harvested, they can have a completely differrent taste to em.

The Apalachicola Bay yields SO many oysters, they are shipped all up & down the Eastern Seaboard..if you eat oysters and live on the East Coast, you've probably had some...the NC/SC oysters are plentiful, but not on the scale of the FL Gulf oysters and tend to remain more localized...if they come from those areas and kept properly, they're as good as oysters get...
...about the only thing that slows the FL Gulf oyster production down is the occasional Red Tide that invades that area...http://www.apalachicolabay.org/index...49/eventId/475 That I know of, I've never had LA or TX oysters, but from Ferm's description, they don't sound REELAPEELIN!!...lol!!

Alright I gotta stand up and rep Goergia. I think its kinda the same with the shrimp. Any place that has good spartina is gonna have good oysters, excuse me, the best oysters.
As I sit here thinkin whether or not to kill myself for the time change next weekend, I remember.......Oysters are the ONLY good thing about winter
