1st question...some have refered to Cuddy Cabins as CCs ... I think of CCs as Center Consoles, so not 100% sure which yours is??...
Either way, I agree w/MJ...on that year model, you'd have to raise the entire floor-deck to make a self-bailer of her ... and then install all the plumbin' needed, so if it's that high a priority for you, I reely suggest gettin' a newer hull that came from the factory that way ...I like yer idea of an open grate over the motor-hole, but like MJ suggests, a coupla strong bilge-pumps under the grate should take care of ya!! ;) ... Whatcha repowering with?... Got any V-20 pictures??...we view those for free 8) ... although there's a nominal charge for viewing non-V-20 pix ;) ...
