the older boats like ares (1975 Cuddy here) had a lower deck then the newer boats.
I don't think you are going to be able to do it? I have wanted to do it to mine but with the floor tanks it is almost impossible to stop all the water!

Add to bilge pumps, one low one high and you should be fine.
