Default Pompano

had enough of trolling for spanish and went to mexico beach to do a little surf fishing. after about 2 hours of nothing, whiting started biting, caught 6 or 7 and this guy comes along. this is probably the largest one i have ever caught. we will enjoy him tomorrow, along with some black beans & yellow rice.

it does look like a fang sticking out, actually that is a piece of his lip. they have very small teeth for grinding shellfish.

around 4 lbs. they are cousins to the permit you see in the bahamas and south florida, which get much bigger. pompano are one of the most sought after for the table and are around 10 to 12 dollars a pound. to me though, it just tastes like fish. i prefer flounder & triggerfish.
