No kidding. After I did my first brisket I became an addict trying to perfect it and make a good one. Ended up spending a small fortune getting it down to where I could smoke a good one.

Agreed Ferm...Im not one to eat possum and such like some hardcore hillbillys known for my region but we smoked one at the hunting camp just to "see" how well it could turn out. Both me and my buddy that owns the property are pretty good at Que so we gave it our all. Let me tell you, It was FINE...anyone else that hadnt seen us clean it would have thought it was BBQ chicken...LOL


Dont plan on doing it again though.

Dont plan on doing it again though.
I cooked down 2 raccoons one time in a crook pot and they turned out really good. But like you said, I probably won't do it again. But it was good!!
