The place to start with the mounting height is to measure the height that is now (the height of the cutout in the current transom and the motor mount boltholes that you have been using). If it is working well now, let that be a guide.
One of the drawbacks of using a bracket on a shorter boat is the increased pitching. This will cause the motor to have a tendence to rise and then be dunked. I am looking into maybe installing bait boxes on the sides of the transom that when empty will add to flotation.
