			Excellent table fare.  They are a member of the jack family, so on the oily side, usually baked or grilled. Pompano palliote  is a famous New Orleans recipe where they are baked in parchment paper.  I usually filet and skin , then grill.  The other fish is a whiting, also pretty good eating. Usually caught in the winter months, this one is a decent size. Make great tacos.
