Most any construction grade adhesive will stick to stainless, but really, a mechanical fastener is a better choice. Drill, countersink and use flat head stainless screws would be the way I'd do it.

Since you have the folded 3/4 lip I would drill in from the sides, that way you'll have a smooth, easily cleaned surface up top. Coat the underside with adhesive, marry it to the plywood, and then put in the side screws.

And lastly, not to throw cold water on what sounds like a really nice project, but steel or any kind is not very forgiving to a knife blade. Nothing will dull a sharp blade faster than a few contacts with hard steel. That's why quality cutting boards are made out of wood or nylon. Just something to consider.

If God didn't have a purpose for us we wouldn't be here, so
Live simply, Love generously, Care deeply, Speak kindly.
(Leave the rest to God)

Silence, in the face of evil, is itself evil. Not to speak is to speak, not to act is to act. God will not hold us guiltless.
