That hard steering left is just a function of the rotation of the prop. If you still have your original steering cable thats normal. If you upgrade your steering to at least no-feedback helm or of you got the dollars for hydraulic it will help with that alot.

RWilson.. I actually do have hydraulic steering. Also, I noticed one afternoon out that it became noticeably easier when I correctly adjusted my trim upon coming on plane, which is why I am led to believe that it is actually user error on my part with incorrect trimming and also possibly the trim tab needing to be adjusted a bit. Still getting used to the boat, but so far it's a blast!

Sweet looking Rig!

When planing off have the engine trimmed down and then trim up some once on a plane. You'll learn to find the "sweet spot" where she runs the best and gets the best fuel mileage and best ride.

I have that on mine, I call it Armstrong power steering. Made by the same people who made my windlass.
