If a person were to use an electric pump it would need to be ignition protected just like the starter, alternator, and distributor. If you plan to be on salt water you have additional corrosion concerns as salt air can be hard on electric items not designed for it.

To only run the pump only at 160 plus may cause hot spots. The pump should always run and the thermostat takes care of temp regulation.
