As far as I know ALL of the 2000 model HYDRA-SPORTS came with a 27 1/2" tall transom which works out perfectly for a 25" shaft engine as this is a deep V hull and the engine needs to be mounted a little on the high side on them. Judging the angle of the anticavitation plate swing toward the bottom of the transom, looks like it would come down about right...and the motor is all the way down, so if what you describe is a problem, could it be solved by simply raising the motor??...not that it matters to me, but that's a pretty sweet rig...
