Generally speaking, the rule of thumb is that if you're running an alum prop and you switch to SS you go down one pitch. So a 19p Alum becomes a 17p in SS. Again, this is a general rule of thumb... individual results will vary depending on load, hull, etc etc.

the general rule of thumb is that 1" in pitch = 200 rpm. Going from a 19 to a 17, should get you from 5000/5100 to about 5500. I would then add a heavy(size 2) cup on the wheel, and you should get a very low slip ratio, probably turn ROUGHLY 5400, and get 2-3 more mph.

I believe that the M stands for Michigan wheels, the prop manufacturer, which is like an "oem" prop manufacturer. By far the most popular out there.
