anything that has a long list of cautions. If it says environmentally friendly or cleans up with water, don't use it, you need the bad stuff, look for aircraft stripper. Seriously, don not try to sand any off with out proper respiratory mask and a full body suit(don't ask how I know)

I sanded off the paint up to the boot stripe when I painted my boat last year. I wore just a face mask. I felt ill in the evenings after I was done.
I need to buy or find someone with a pressure washer to help get me started.

Oven cleaner works great for clean up of small areas after the stripper has gotten through the thick stuff.

I know everyone has their favorite, but I've always had good luck with Zip-Strip. Easy to find (Home Depot) in large gallon containers. Easy to apply (Paint roller on a stick), Easy to remove (Garden hose or pressure washer) Simply put, it works. (Just give it time to do it's job... leave it on for a while.. follow the directions.) And by all means, use a mask, gloves, and some tyvec clothing.

putty knives work real good, take it easy, let the stripper do the work, do small areas at a time(couple of square feet), try not to let the stripper dry on the boat, use paint thinner with steel wool to get the last bit off. Pull plastic under the hull to let the crap fall off on to it.
