If you filet em out, cut the blood strip out of em, and brine in em a slight saltwater mix overnight. They are pretty dam good eating. My wife would only eat tilapia before she met me, but she'll eat spanish mackerel with no complaints if I clena em this way. She even eats bluefish if cleaned this way.

That is a nice assortment. Nice sized spanish too. Smoked mack looks yummy!
Good job! Spanish is one of my favorite to catch and eat. Best to eat them the evening of the catch, but no problem with eating the next day if properly iced. Double fillet and cut out the blood line, just like bluefish. Fine eating. I bet they are the shizzle smoked.
