So to remove it I will have to drill it out and then use a pop rivit to reassemble? Or maybe just tap it and use my own set screw?

Yep, pop rivets, bolts or self tapping screws.
And I can't find the ones that wrap around and bolt together, just the ones that clamp around that can be slipped on, much like a pipe clamp.

These might work. http://www.foreandaftmarine.com/7-0196.htm I have a feeling that if I take the old bimini apart it may not go back together.

There they are!!

The extra money for them will save replacing the bimini hardware trying to replace or repair.
