They have a much nicer flavor than farm raised turkey, much leaner meat too so you have to watch how you cook them.
One of the best ways I have found is to use something called roaster bags, basically they are designed to be used in an oven and they work well. You season your turkey breasts, put in carrots potatoes onions and maybe some lipton onion soup mix with some water and you cook them in the oven for whatever the time comes out to be for your size bird. The flavor of the bird is something you really don't want to disguise with a lot of stuff, it really is quite delicious. I would say the other really great way to have them is to marinate lighty and to smoke them very slowly. Almost a sexual experience to eat
