Just throwing this out there. I bought a Ken Onion sharpener.
This thing is amazing! Gives a slight convex angle.

Wow Barry.... that thing looks awesome. I might just have figured out what my next months birthday gift is gonna be. Now I just gotta figure out how to drop the proper hints to the wife without seeming overeager or pushy.

The Ken Onion sharpener is the closes thing I have found to having your knives professionally sharpen. I use the 15 degree angle which works well but being such a fine angle it's easily damaged and tricky to use a steel on. It takes a light touch with a steel to bring the point/edge back.

I like the finished edge of the 220 grit myself. I have only used the leather strop belt once.
