Default Italian Style Pan Seered Salmon (or any fish)

Salmon (or any other fish)
put 1 tablespoon of olive oil in pan and spread around to cover bottom completely.
Before putting in fish, sprinkle bottom of pan with
salt, pepper, garlic powder and italian seasoning mix ( make sure it contains oregano).
Put salmon in with skin side up.
cover pan and turn heat to medium high.
Once the heat comes up to temp, **** about 1 minute longer and turn the fish.
Turn the heat down to medium low.
Turn the fish every three minutes or so.
Keep turning until the fish is browned.
Usually takes about 15 to 20 minutes, depending if the fish needs to be microdefrosted.

Sorry there are no exact times or measurements, but
I learned to cook in a diner. There is no time to measure anything when you are a short order cook. ( 32 years ago)

I don't measure either! But I'm only a short order cook for my family ::) not a diner ;)

I make fun of my wife for adding stuff then tasting to see if its enough. Somehow when cooking a small dish I seem to know how much salt or pepper it needs without measuring or tasting. Something you just get used to after a while I suppose. Saves time for sure.
