Default tricks and tips

lets post all our tips an tricks here. hopefully someone will make this a sticky. heres my first contribution;

butter, ever notice on all the cooking shows that the chef always has his/her butter in a bowl on the counter ready to go? that isn't just for convenience. butter loses about 80 percent of its flavor when used while cold. wether ur cooking or just buttering toast, butter taste way more 'buttery' when used at room tempeture.

Trick or tip I got from reading on the Bass Barn:

This goes for non-frozen fish fillets. I haven't tried it with freshwater fish.

DO NOT WASH OR RINSE YOUR SALTWATER FISH FILLETS!!

That's right, do not wash or rinse the fillets especially with fresh water. You might ask, what if its bloody? Take the knife and scrape the blood off or even use a paper towel if you have to. I've been doing this for a year now and I've noticed my fish tasting better (may be in my head??). Rinse your knife and cleaning surface, not your fillets.

Would any true steak lover rinse a big bloody ribeye before grilling it? I know I WOULDN'T!! 8)

Try it, you'll agree....

Use a cast iron skillet! Preheat skillet in oven to 375 degrees, add fillets, cook for 12 minutes....perfect everytime!

TIP

Breathe through your mouth when peeling onions, helps keep from getting watery eyes.

Another tip for onions, Put in freezer for 3-4 minutes before peeling.

...and remember...NEVER speak to the guy at the urinal beside you...whether you know him or NOT!!...although this may be appropriate in Provincetown ::) ...
