best fillet knife? what do you guys use? sharpening? what sharpener do you use? cant keep these dam things sharp.

I use a dexter Russell mild steel at home and a Cutco is in my tackle bag. The Cutco was a lot more expensive but has the blade that goes into the handle.

Dexter Russell seems to be the best reasonably priced brand(well, in relative terms). For flat fish I like a 9" straight blade. For "round" fish I like a curved blade.
I used a stone to keep sharp edge. My brother swears by the Russel diamond sharpening steel. I had one but like everything else it rusted and pitted and became useless. Grind em back on a wheel to get rid of dings I say this knowing I am the worst offender but, never use "the fillet knife" to cut bait, line, zip ties, plastic bottles, etc. Clean it, keep it dry. Baby it. Never leave it on the dash for a week, it will pit and you will have to grind it.

Friend of mine is a striker on a charter boat and uses Mister Twisters. Buys them in bulk and also buys replacement blades in bulk. Burns them out and then sends them back on warranty. He says the Pirahna is better, but buying so many cost wise he does better with the Mister Twisters. So I guess the Pirahna if you want an electric one.

My dexter Russell is mild steel. It used to rust so I used a stainless sink restoration kit to polish the blade. Since I did that and make sure to clean and dry it immediately after use it doesn't rust anymore. The mild steel holds an edge better than stainless.

Actually I use 4 fillet knives, and countless other "bait" knives. Dexter-Russel for all four fillet. (Fluke just seems to dull the crap out of them, so that's why 4) Nothing worse than having to stop in the middle of a fish cleaning job to sharpen them. My main 2 are SS, and the other 2 are high carbon. The high carbon hold an edge better, but you MUST take care of them... clean and dry before putting them away. A few strokes with the sharpening steel keeps them ready to go most times. The SS require a bit more care for sharpening.... I use a wet stone and then a diamond stone to keep them ready.
Stinky, that Pirahna knife looks very interesting. But the blade on yours seems to be different than the one in the ad. Yours seems thinner and more flexible and fatter at the tip. Did they change the style? How do you sharpen it, or do you just buy a new set of blades?

Yes they change style every so often. I have one like in the ad now as well and it works great. I did like the thinner blade though.
