Default Steering problems

I just purchased a 1988 V20 CC with a 1996 Mariner 135hp V-6 2.0L. Took it out several times runs great, I absolutely love it. Two things that I need to figure out. First, it seems that it’s hard to get out on plane so I was thinking of getting that hydrofoil stabilizer on my lower unit. Will it help? And second, my steering is a little hard and once in a while squeaks (from behind the wheel), I don’t know if I should grease it, change the cables or the rotary unit or both. Is it difficult to replace the whole thing? Thank you in advance.
