Fried prefferabbly. I use vegetable oil and batter the fish in yellow corn meal with some PRUDHOMES seafood(or REDFISH) MAGIC. Also remember if your frying GROUPER to fry it fast and HOT! Grouper will apart very easily unless you almost flash fry it. You want the oil so that when you put a little corn meal in it pretty much instantly cooks. It also keeps the fish from being soggy later on for leftovers. I've also done it blackened may times as well.

I like to cut them into finger like pieces myself about an inch wide by 3-4 inches long. That way they fry evenly and don't get mushy.

I also like it baked with "butt rub" on it. Its in the spice section of the grocery store and is made to put on Boston Butt pork.

I slice the pieces so that they are about 1 inch thick.

Ferms got it right on the falling apart.

Man my mouth is watering.

Well the guest just left, I cooked just the way you said therm and all loved it!! The first couple of pieces were a bit large and I cut the rest up smaller.

Just Like Cod fish, nice white fish with nice taste!! Had fish, fries, oinion rings, coleslaw, all was great!!
