Default Dexter Russell?????????

so I have a cheapo fillet knife that I use for everything. from cutting my steak to slicing pot roast and the like. my wife, who I affectionately call "The Destroyer" somehow bent the tip. i'm in the market for a new "everything" knife. dexter Russell looks nice and relatively inexpensive. 10 bucks. 12 bucks. I will use it for everything from cutting my meat to slicing corned beef to actually filleting a fish.

Check out Morakniv knives. I bought mine off amazon, $12-$15. Ive got both stainless steel(Sanvik) blades and carbon steel. Gave a bunch out as Christmas gifts last year, so far three people have cut themselves with them. They are scary sharp and hold a great edge. I like the 3.9 inch blade in carbon steel for general purpose, I keep the 4.1 inch SS blade for around the boat.

I like dexter russell oyster and scallop knives. Filet are fine too. I get them in a resturant supply store, but their up to $15-$25 down here. $35-$45 in a marine supply store.

My favorite bait knife ever was a Dexter I got at the flea market for a dollar, lost it somewhere on the back road on Portsmouth Island.

I don't know if yous guys have flea markets up north, but I find a lot of nice old knives cheap at ours down here.

Yup, we got them up here also. Great sources of equipment if you know what you are looking for and know their worth.

I ended up buying a couple of cheap kvd knives from wal mart, I think they were made by mustad and are the Kevin Van Dam series. It's a 6" filet knife with a rubber type handle, black on top and red on the edge side. I use them for everything from utility, to filet, bait, general cutting, meat work, pretty much everything. I've had real good luck with them holding an edge, but they don't seem to sharpen well with the cheap sharpeners where you just pull the blade through them. I use a wetrock stone, and can get them sharp enough to use for surgery.

Deboning, removing fat, spatchcocking, butterfly, criss cross cuts, any kind of work you would do in preparing meat for cooking.
