went pompano fishing today, great weather, wife off work, so we went to get some supper. no pompano, but loaded up on bait, sand fleas aka mole crabs. i saw a show on travel channel where this guy was in the philippines and they were cooking them. i thought , why not. brought home about 100 and put 75 in the freezer for future trips and dip the rest in hot peanut oil with a little fish fry dusting. they were great, like a combo of a soft shell crab & a fried shrimp.

skunk, they are great. the shell is crispy like a potato chip. i NEVER would have thought they would be edible. you have to rinse them very well and tear off the digging claw on the bottom and thats it. also, they have to be fresh. these are alive when they hit the grease.
