Default My first smoke is History

Thanks to you guys here and a few others I have used the smoker, and all is well!!
I had a friend stop by and he said what you doing, I said smoking ribs. He said I did not know you knew how to smoke stuff, I said I don't this is the first time.
Just then another guy who I have never met stoped by to look at a trailer I had for sale, said what you smoking, I said ribs. He then went on to say he use to live in Alaska were they smoked everything, and has not had any in a long time wanted to know if I had been doing it long? I said No this is my first time.
About this time I was in 1 1/2 hours and as suggested on a You Tube guy I took my Trimmings and smoked them also, stated they are great to snack on till the rest are done.
I let the stranger and my friend try them and they were this is great!! a perfect 10 the stranger said! I was happy!!

So what I did was this, Got the smoker going with Apple wood and just good size pieces, No soaking just put them in there. Turned on the gas and lit the smoker got up to 250* as suggested.

Ribs I trimmed them removed the membrane and covered with Frenches Mustard, Then added the rub, The rub came from my local Stop&Shop as I have no idea were they sell that stuff up here in the North East, and did not want to wait for the mail.
What I used was Grill Mates Pork Rub, Coated everything real good!



Then took out and put in the smoker



After the 3 hours I wrapped in foil and put some Apple Juice in with them as suggested, back in smoker



I forgot the pic in the foil :shrug:

Then took them out after 1 1/2 hour and covered with Sweet Baby Rays



Then back to the smoker, This is were I screwed up a bit and thought I was going to be in trouble!
I had to run down to Lowes to get something and was gone longer then I wanted to be, then when I got here went right to the smoker it was up to 300*:exasper:
So I took them out and the were done but not burned thank god!! But I would have like them to had been done a little less.





My son said he was not going to eat as he has had some smoked food before and did not like the smoke, I said try it, I did this after asking all kinds of questions and its real good, so he tried them and loved them!! Eat a whole rack by himself!
My wife who hates everything tried them and eat a bunch and said this is the way I need to do them from now on!!
So all went well!! But I have to go a bit less time next time and also the temp went to 300 cause the water in the pan went dry, so I need to pay more attention.

I am having my annual clam boil this week end for about 30 family and friends, was already told by the wife I am also adding ribs to the menu!!

I've been wondering about how it went all day!

Looks REALLY REALLY good. Also the "Grill Mates" is the rub from McCormick's - the other one mentioned that I like. McCormick's makes some really good seasonings IMO.

P.S. Around here we all have smokers so it seemed the appropriate thing to do is give the smoker a name. Mine is Hogzilla. My buddy's smoker is Smokey and my other buddy's dad's smoker is named the Rib Master.

Aw hell, he's done addicted the first time out!
Looks great MJ!!
And you did a wonderful job too!

No end to what you can come up with.
Whole chickens, steaks, butts, loins, fish and on and on.
Even some usually tough pieces of meat just fall apart doing that to them.

Thanks guys! I am having my yearly clam boil this weekend and ribs have been added to the menu so we will be smoking again!! CB will be here with a bunch of my family and Kenny his wife, I am doing 50 pounds of steamers, with all the fixings, so far there will be like 25 Lobsters! Corn on the cob, hot dogs, burgers and so on, should be a great day!

Looks great Mj. If i had the time i would give it a shot. But worki g all day then delivering pizzas at night (gotta get boat money somewhere) leaves me no time. I haven't had breakfast and looking at those pics has my mouth watering.
