Default Pompano Spring Run 2018

I know i posted a pompano thread a month ago, but that was tease, water just got too warm to early, then cooled back off. these are on schedule and full of roe. water is 71* and its the middle of april. this is when they are supposed to be here. fished for 3 hours this morning and caught all of these the last 20 minutes i was there.

Excellent table fare. They are a member of the jack family, so on the oily side, usually baked or grilled. Pompano palliote is a famous New Orleans recipe where they are baked in parchment paper. I usually filet and skin , then grill.

The other fish is a whiting, also pretty good eating. Usually caught in the winter months, this one is a decent size. Make great tacos.
