Question New to me '75 V20. Looking for ideas...

Recently purchased a 1975 V20. Pics to follow tomorrow once the rain stops. The boat itself is in terrific condition and the Merc 115 runs like a champ. The wiring for lights, bilge pump, fuel sending units, etc. is in shambles. Just searching for some ideas on a path to start. Spend the money and do a breaker panel with one large blade fuse on battery side, or just a fuse block with individual toggles? None of the existing switches or pulls are in any kind of working order, as well as all the gauges will need to be replaced. I'm comfortable with electrical work, just not sure if I should dump that kind of money ($125+) on an 8 switch breaker panel when i'm going to be buying several yards of various gauge wiring and such. Any ideas or suggestions would be appreciated. You guys seem to be a wealth of info from what i've seen so far and your time is much appreciated. Thanks. Oh, and I'm looking at installing some kind of livewell setup as well.
