Default Fried some Crappie last night MMMMMMMMMMM

Me and some buddies caught some crappie (aka white perch, croppie, speckled perch) yesterday evening. Probably about 10 or so. I kept 2 for the frying pan. Scaled, gutted, cut-off the head & tail and washed them real good. Then I cut vertical slits through the meat down to the bone but not through, then one horizontal just above lateral line (vertical Slits about 1 inch apart). Breaded them real good with some seafood breader and made sure to get the breader down in the slits and fried them up on each side in about 1/2 inch of veggie oil.

I literally drove over to my mamma's house and smacked her, they were soooooo good!!
I feel sorry for the crappies this summer. I think we are going to have quite a few memorial services for them, God bless thier little souls. Have pix but can't post. I won't make any promises but maybe I'll get around to posting them.

Have you ever tried them whole? What about whole flounder?

I'll fillet the next one's if they are big enough. The ones I posted in the picture dump post were a 10" and a 12" which were plenty big to fillet. I just wanted to try em out whole since I like whole flounder a lot. Here they have to be at least 8" to keep. Personally I like the taste of a the 8" - 9" best. My buddies caught 22 keepers and 6 yellow perch one day last week. Pretty good considering they don't start fishing til around 6pm - dark. You know its fresh when they are flopping around while ur cleaning them LOL.

I've only had fried whole flounder but I found this pic online showing one baked. I might have to try it this way....maybe stuff that sucker too.

Yes Ive done them both whole as well. Ill mix it up from time to time. Looks GREAT!

Were can you keep 10" to 12" flounder. Here in Va its 19".

I don't know of anywhere. In SC it was 12" up until a year or 2 ago but 14" now. I never kept one below 13" when it was 12".

I think you might have confused my post (or maybe I confused my post LOL). I was talking about the crappie being 10 & 12 inches, then I threw in a pic of a flounder I found online. I wouldn't keep a 10 or 12 flounder even if it were legal....not enough meat. On the other hand, a 10 or 12 inch crappie does not stand a very good chance for survival on the end of my line!
