Sander vitreus taste like... They along with yellow perch
Perca flavescens are arguably the best tasting freshwater fish out there. Bluegill and other assorted sunfish and crappie are fine tablefare also, but walleye and yellow perch are considered by many to be the best.
Characteristics of walleye, light flaky fillets of mild flavor. I do not keep anything but walleye and yellow perch.
Both can be pan fried, deep fried, poached, baked, broiled, grilled, steamed, microwaved or made into soups or chowders. Use your imagination!
