set the GoPro to 1080 S-30. Super wide so you don't have to be aiming the camera. Also, it curves the horizon which looks cool.
GET A FLOATY BACK so it won't sink!!!!
I have a MAC and use iMovie. EVrytime I get used to where things are Apple updates it and moves everything...
If you have a PC, Windows Movie Maker used to be OK, haven't used it in years.
There is a lot to do... You can't just let it run...trim it down to what gets the point across. You gotta use "Ken Burns" which zooms/pans in or out...makes it look like the camera was moving. Throw it some still shots. You can pull really great stills out of HD video
The hardest part is finding the right music and timing the video to breaks in the song...
"Catching" good shots has become ALMOST as rewarding as catching fish...
and when you have the first tuna of the season on the line, put the camera down and concentrate on gaffing it....ask me how I know..
