I am not sure what to say??

But I use to have the same problem with the I/O as far as getting anough trim. But after I did the bracket I have a ton of trim and it does tuck in just fine to give me a nice ride!!

Maybe just run one motor when you want that mid range?? I have never had twins, and not sure how they work, but sounds like you have to much power??
Cutting one motor might be the right thing to do?
