Default Butternut Squash soup

My friend Kenny told me this recipe the other day, and I tried it, it was not anything to go gaga over, but it was surprisingly pretty good.

4 cups of peeled and diced up squash (about 2" cubes)
1/2 Onion quartered (I used a hole small one)
3 carrots cut up
1 stalk of celery cut up
3 TBL Olive Oil
2 cup Chicken broth
2 cups water
1/2 TSP Salt (optional)
1 pound Italian sausage
1/2 pound Ground Linguisa (optional)

You can go with less liquid for a thicker soup, I am going to the next time, but this was good

Put the Squash, onion, carrots, celery in a pot, and boil till all is cooked.

In a separate pan cook the sausage, and if used linguisa' cut sausage in about 1/2 inch pieces, then put to the side.

When the squash mix is all cooked drain, and put in a blender, add salt, water, chicken broth, olive oil, and mix till all mixed, and you have a puree.
In bowl put meat, and pour the puree over the meat.

Enjoy! Its something different!
