As far as how far to run offshore, of course the sea conditions dictate all...another factor is fuel capacity vs fuel burn...your 21 has a 60 gal tank...applying the old rule of thumb, 1/3 out, 1/3 in and 1/3 reserve... you would go out on 20...return on 20 and have 20 as reserve...so whatever distance you can squeeze out of 20 gals should be your approx limit...assuming you aren't carrying aux fuel...
If the above rule of thumb puts you out more than 30-40 miles, adjust for common sense...these boats handle seas as good as they come, but remember, it's still only a 21' boat w/ONE motor...and I would only do that when the sea has been and is forecast to be calm for several days...if you're looking at a forecast and there's only ONE day in there that's doable, I wouldn't count on it...another idea is to go out w/another boat...there's safety in numbers....especially out there...
