If you catch a big one two things to keep in mind, first they have a nasty barb on them and will try to imbed it in you so handle with caution, if you have to bring it onboard pin it's nasty tail before trying to dehook. If you are going to eat it, Whack it and later when you go to pick it out of the box don't be surprised if it strikes you. When they are flat on the ground they have a strike like a rattler.
If you want to try something actually pretty good and you have one with some size to it they make a cutter that looks like a sharp strong cookie cutter and you punch out little disks of it and cook em up like a scallop. Had them a few years ago and they were pretty good.
The rest of the world prizes them, I can take it or leave it :-/
