Is this how you East Coast guys clean you fish. When we clean our Walleyes on the larger ones we save the cheeks also.

What's wrong with a little ash on the fish.
I think it may even give a little bit of that smoky flavor. 8)

Thats the way I do it , but much slower!! and the fluke we get are not big anough to get the checks.
