V 20 (degrees)?
 
I need to build a cradle for my V. I can't rely on it's current shape because 1/2 of the outer bulkheads are detached and the outsides of the hull are sagging a little. Would I be correct in assuming I can build to 20 degrees all along the bottom, or does the angle change from back to front? (ok aft to foward for those who want boating terms ;D)

I think it maintains 19* from stern to midship...then becomes variable to much sharper angle... :) ...

Would this help?

Assuming the trailer is straight, I can measure the height between the frame of my trailer and the outer most edge of the bottom of the boat. If I did this every foot, then you could "connect the dots" and know what the curvature of the hull along the side should be. Create your jig and duplicate this curve for both sides and the keel and the deadrise should fall right in the middle where it belongs.
