Chili Recipes?
 
Does anybody have a good one for chili? My son entered me in a chili cook off for his middle school and all i do is the standard chili mix with ground beef or venison. Its OK , but i thought somebody would have some secret ingredient i could add. Thanks

A couple of things that will church up the "flavor packet" method:

Use a big can of crushed tomatoes but cook on low for 3 hours so they cook up good.

Use 2 cans of beans instead of 1, and make one of them chili flavor kidney beans.

Use ground sirloin instead of hambuger and leave in bigger chunks when you brown it.

Use the Walmart brand mild packet.

Use Tabasco Green sauce for the heat, it has a better flavor than most red/orange hot sauces and is not overpowering on hotness.

You will be a sure winner.

WOW...just got home from the store with:


Pkg of Wick Fowler's False Alarm...I like hotter, but wife/kids gotta eat too...
16 oz. jar chunky salsa (mild, see above)
lrge jar sliced mushrooms
can black beans
can red kidney beans
2.5 lb ground beef; brown in chunks, drain and seer a little, adding LOTS of Montreal Steak Seasoning
mix in all above and let simmer for as long as you can stay away from it...serve w/ black-iron skillet cornbread or garlic toast...






...then stay out from in front of the TV ;D ;D ;D ...

G, That sounds so wrong, it just might be right. I'll try it on a sample bowl.

RMB, good advice. I like Tabasco or Franks Red Hot in mine, but thought it might be too much for middle schoolers. I'll try the green. I usually like Crystals when flavor over heat is needed, but it gets too salty real quick.

If you want to really go all out, pour in a can of Green Giant super sweet corn about 15 minutes from end of cooking time, you only want the corn warmed, not cooked so that it stays crisp.

The Missus used the recipe on the Hanover Bean can as a guide. God only knows what else goes in it. I prefer to put my cornbread in the bowl, then put the chilli on top. MIx it up a bit and mmmm good.

Here's an idea since it's for the kids. My kids love it with Mac n Cheese in the chilli.

randleman...like the corn idea...sposed to be ice on the roads here in the mornin'...so might have to chili w/ what I got ...




...and Slot...ya know where the sun don't shine??...NAW, just kiddin'...my girls(15 & 17) still eat Mac & Cheese like the bowl's on fire :o ..

phatdaddy...Wick Fowler puts up False Alarm and 2 Alarm pkges...they got 5 mini-pck of ingredients in each, complete w/ chili powder, garlic, masa and others...it's REEL good...they say tomato sauce; i use salsa...they don't mention beans; I use 2 cans....gotta think outta the pckge ;D ...

make sure you add about two to three tablespoons of chilli powder.
give you that chilli flavor.

Chili Powder is one of the pckges in Wick Fowler's pack...and you right; it's about 3 TBLSNS ;D ...also paprika, garlic, oregano, salt (i leave it out) and Masa .... makes a good pot o' chili :D ...

Somebody else told me to add a little sugar. That ties in with garagenc tip on chocolate. Thanks for the tip. It's been cold and raining here for a week and we have another front behind this one, so it looks like I'll have a lot of time to experiment.

Thanks for all of the help, but it was not to be. *The cook off was Monday night, and I came down with a wicked stomach bug Monday morning. *I don't need to go into details, but chili was the last thing i wanted & needed to to see. *Thanks for all of your help.

I made a sample pot on sat before and it was good. I used the sugar & tomato paste. I also added grated sharp chedder & salad croutons instead of crackers. I was disappointed also. I think I had the "cruise ship flu". I haven't been on a cruise, but a lot of the virus is going around fl.
