Charlie, Pâté is not a gay word, it is however a word that sophisticated people use when preparing Gourmet food, usually referred to a spreadable paste made from meat, vegetables or fish. :D :D

Pâ-té (noun)

Pronounced [ paa tay]

Gourmet

Pronounced [gour-may]

Which referrers to or preparing high-quality food that is expensive, rare, or meticulously prepared. :)

To MJ's comment - if I were near, that Pate would have never gotten made cause that smoked bluefish looked OUTTA SITE!

Great pix, great narrative, great recipes, keep em comin and next time show me that fireplace so I can copy you ;D

hey chumba wumba, you guys are playing without rodney harrison and i'm hoping tom brady is involved in a drive by or maybe rides his motorcycle without his helmet.
in any case, we have the psychological advantage, having already beat you guys in foxborro this season. we are also coming off a pretty good (for the jets) winning streak.

Nice smoker for sure. So it's a fireplace with no smell entering the house? I actually lilke the smell of a nice wood fire, but hate the mess that goes along with it. We've got a gas log job right here in front of me. Not the same. but wifey likes to snuggle by the fire. ;) Of course right now it's no where near cold enough to turn the darn thing on. ;D

No smell = no smoke ;D

There's a 350 cfm blower in the basement that sends indoor air throught the heat exchanger and out from the front griddle above the doors. I love it... ;)

That is one bad a$$ setup. Thanks for the pics. I love just about anything cooked over wood coals. I bet some 1/2 chickens would be good.

Hey Bass, over the weekend we fired up my dad's homemade smoker. I'll have to get some pix. Its a really really sweet setup he has. For the burn-down barrell he took a big air tank and cut it in half, ran 1.25 inch rebar all the way accross just of above the door to hold the wood up and allow the coals to drop through. We cooked 3 deer hams and two racks of baby back ribs. For the ribs we first put on the rub, then let them soak in aluminum pan of vinegar based bbq (lexington style BBQ sause) over the coals. Left them like that for about 2 hours, then over the wood coals at 190 for the next 5 hours, applying the bbq dip every so often. Like yours, these ribs didn't last long! But at $15 a rack they better be good! Nothing, I mean nothing beats slow cooking over wood coals.

...and BR...sounds like you cookin' up some good stuff, too...looks like we gotta add another stripe to the sleeve on yo DAWG jacket ;D ...
