Just letting you guys know, I am still getting out and fishing a little
went out about 10, just to get in the water to beat the heat, put a live chofer, pinfish, on and threw it out. put rod in holder and set back in deck chair. Kinda halfway snoozin when the drag starts screaming, ended up with this guy. just enough for wife and I for dinner.
also walked up 9 crabs, not enough to clean, so froze them till we get some more

What kind of meat you get from reds? What would you compare it to?

Phat, nice Red fish and those crabs, I would've cleaned them as soon as I got back, then froze them. I love stuffing them, then bake them, I crack the claws, put them in my gravy (sauce), great Sunday dinner with a nice glass of red. But that's me.
Another day in that beautiful clear water and having a great day, nothing better, enjoy!!!

That was Phatdaddy not me.
I gave up on crabs. Too much work. Gotta be really drunk.
I do buy a fried softshell crab sandwich at the Patio Bar whenever they have them:pray:

Charlie, they are a firm fish, good on the grill or frying. They get huge, 25 lbs or so, but they are not good to eat best ones are 17 - 20 inches. Nobody really ate them here until the 80 s when the blackened redfish craze was started. They are pretty bloody, I always bleed them as sone as I catch them
G, I cleaned the crabs before freezing. We will collect about 2 or 3 dozen and then steam and pick the meat to make West Indies Salad

Digging up an old post I missed.....
Phat, those reds get just a touch bigger than 25 lbs!
The IFGA World record was caught in NC a looooong time ago from the surf:
94 pounds, 2 ounces
In 1984, a giant red drum weighing 94 pounds, 2 ounces was caught off Hatteras Island. It broke both the state and all-tackle world record, and it remains the International Game Fish Association All Tackle world record for red drum today.
