With the recent interest in cooking, I figured I would post up an old standby of mine. You take some jumbo baking potatos and bake em until they are done. Then cut the top with a knife to make a nice sized opening that you can carve out the potato(use a small spoon, the smaller the better here) but leave about a 1/4" of potato on the skin to hold it together.

Now take and dice up some veggies and your choice of meat to stuff them with. I used steak, red and green peppers, red onion, and some minced garlic. I have used chicken breast, pork chops, and all different kinds of veggies from green beans, broccoli, cabbage, and whatever mix you can think of.

Then I like to use some grated cheddar to top em off, but you can use whatever cheese you want or leave it off all together. And bake em at 350 for about 10 minutes to let the cheese run down into it good.

Makes for a pretty good dinner, and mighty tasty if I do say so myself.

Works great for leftovers. I actually first tried it out because I was almost out of groceries in the fridge. All I had was a small piece of steak(not even enough for 1 person, let alone 3 of us), some potatos, and a few veggies. Figured what the heck and slapped it together.
